Pineapple Rum Daiquiri
With the rise of the craft rum movement, there are so many awesome rums to mess around with. For this daiquiri, I used Plantation Pineapple Rum. Rich, refreshing and comforting, subtle but with a lot of complexity.
It's loaded with tropical flavors: banana, lime & pineapple, along with comforting notes of clove and brown sugar. But it's beauty—its the subtle complexity.
1.5 oz Plantation Pineapple Rum
0.75 oz Simple syrup blend (see below for recipe)
0.75 oz Fresh lime juice
1 pineapple leaf

100g white granulated sugar
50g demerara sugar
150g hot water
