Pineapple Rum Daiquiri

With the rise of the craft rum movement, there are so many awesome rums to mess around with. For this daiquiri, I used Plantation Pineapple Rum. Rich, refreshing and comforting, subtle but with a lot of complexity.

It's loaded with tropical flavors: banana, lime & pineapple, along with comforting notes of clove and brown sugar. But it's beauty—its the subtle complexity.⁠


Ingredients

  • 1.5 oz Plantation Pineapple Rum

  • 0.75 oz Simple syrup blend (see below for recipe)

  • 0.75 oz Fresh lime juice

  • 1 pineapple leaf

SIMPLE SYRUP BLEND

  • 100g white granulated sugar

  • 50g demerara sugar

  • 150g hot water

Stir thoroughly until sugar is fully dissolved.
